Mongolian Beef Lettuce Wraps

Okay, so I am still having so much fun cooking on my flat top griddle! I love finding things to prepare and not only is it fun but it is so easy. These Mongolian Beef Wraps are wonderful and full of flavor. My son had a couple of friends stop by while I was cooking and ate a piece right off the griddle. “Does your dad always cook like this?” he was asked. Well, I guess I do – it is so much fun to be cooking outside and creating fantastic dishes. I hope you enjoy this one as well.

Mongolian Beef Lettuce Wraps

2 lbs. Steak – your choice
1/2 C Corn Starch
1/4 C Oil
3/4 C Soy Sauce
1/2 C Brown Sugar
1 T Ginger, grated (see note)
3 – 4 Cloves garlic, minced
1/2 C Water
4 Green Onions, sliced
Butter Lettuce

Cut your steak into thin strips about 2″ long. Make sure to cut against the grain of the meat. Place the steak in a bowl and add the corn starch. Stir to make sure all the meat is well coated.

In a separate bowl, mix together soy sauce, water, brown sugar, garlic and ginger. Stir to combine and make sure the brown sugar gets dissolved. (If you need to heat it you can.)

Heat your griddle to medium high, add oil and add your steak. Using a large sturdy spatula, cook your steak until you have a nice crust and the meat is almost done. Add half your green onions and begin adding your sauce a little at a time, folding the steak and sauce over itself as you go. The sauce will thicken as it heats and will create a wonderful glaze. Continue adding sauce until you have enough, depending on your taste you might not quite use all of it.

Serve with your butter lettuce topped with the rest of the green onions. This is also wonderful over rice.

Note: The best way to grate fresh ginger is to peal your ginger and place it in a freezer bag. Then when you need some just take it out of the freezer and grate what you need.
