Cajun Chicken Pasta

In my world of one-pot dinners this one was a huge hit. The incredible combination of cajun, chicken and sausage, all drawn together with cream and cheese. It will not last long on your dinner table. This is a flavor explosion that is sure to please!

Cajun Chicken Pasta

4 T olive oil
1 lb. chicken, cubed
1/2 tsp salt
pepper to taste
14 oz kielbasa, sliced
4 cloves garlic, minced
1 qt chicken broth
2 1/2 c heavy cream
1 lb. dried penne pasta
1 1/2 T Cajun seasoning
4 oz parmesan cheese, grated
1 c Italian parsley, minced

Heat a heavy pot on your camp stove. Season chicken with salt and pepper and brown in olive oil over medium high heat. Add sausage and continue to cook until lightly browned. Add garlic and cook for for about two minutes. Add chicken broth, heavy cream, dried pasta and cajun seasoning.

Stir together and bring to a simmer over medium high heat. Reduce heat to low and cook covered for 15-20 minutes, or until pasta is tender. Remove from heat and stir in parmesan cheese. Stir in chopped parsley and sprinkle with additional cajun seasoning to taste.
