Loaded Mashed Potatoes

This may be one of the ultimate comfort foods. As I was following one of my favorite blogs Chef in Training I saw this and thought how it was made for a Dutch oven. It was so good we made it two nights in a row.

Loaded Mashed Potatoes

4 pounds potatoes, peeled and diced
1/2 cup sour cream
1/4 up butter, softened
1/4 cup milk
1 tsp. salt
1/2 tsp. pepper
1 tsp. chicken bouillon powder
1/2 tsp. garlic salt
1/2 tsp. garlic powder
1/4 cup grated Parmesan Cheese
1 1/2 cups grated cheddar cheese
12 slices bacon, chopped and cooked
1/4 cup green onions

On your camp stove, boil the potatoes until tender. Meanwhile, on your other burner, cook the bacon and set aside on a paper towel. Drain potatoes and mash, adding next eight ingredients. Stir in Parmesan and 1 cup cheddar cheese along with half the bacon.
Spoon into a 12″ Dutch oven and spread out evenly. Top with the remaining bacon and cheese.

Bake at 350 with 8 coals on the bottom and 16 on top for 30 minutes until warmed through and cheese is melted.  Sprinkle with green onions and serve.

Note: If you are going camping take the mashed potatoes in a zip-lock bag as well as the other ingredients. Mix everything together on site and bake.
