Cowboy Delight

I absolutely LOVE easy comfort food.  When I was a young boy my father used to make something he called Slumgullian.  It was a little bit of everything all in one pot.  Some might call it a goulash.  While looking through an old cookbook I found something that was real close and instantly took me back to father and my childhood.

If you are going outdoors with a group of scouts or just as a family, this is a great one pot dinner.  The fun thing is that you can add to or take-away things you either like or don’t like.  What ever you decide to use, your family will love it!

Cowboy Delight

1 1/2 lbs. hamburger
3 cans tomato sauce, 8 oz.
1 can sweet corn, 15 oz. drained
1 onion, diced
2 C elbow macaroni, uncooked
3 C water
1 tsp. dried basil
1 tsp. oregano
1 tsp. chili powder
1 1/2 tsp. sugar
1 1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 C cheddar cheese, grated

Place a 12″ Dutch oven on your camp stove over medium heat. Brown hamburger and then add onion, stir well and cook till onion is tender. Add everything else except cheese and simmer uncovered for 25 – 30 minutes on low heat until macaroni is tender. Stir occasionally and add a little additional water if needed. I used my Dutch oven dome or you can use a Dutch oven with Charcoal (you might need to reduce the water a little).

Turn the heat off and sprinkle the cheese over the top and allow it to melt. Then just sit back and watch it disappear!
