I think mac and cheese is one of our all-time favorite comfort foods. It is rich, warm, gooey and packed with flavor. We put a little twist on this one with tortellini and Italian herbs. It is simple to put together and only takes a few minutes to cook. Give it a try, you will see smiles all around the table!
Italian Mac and Cheese
2 C heavy cream
2 1/2 C milk
2 tsp. flour
1/2 tsp. salt
1/4 tsp. black pepper
2 C Jarlsberg cheese, grated (can use Fontina or Baby Swiss)
3/4 C Parmesan, grated
3/4 C Mozzarella, grated
24 oz. 5-Cheese Tortellini, fresh
1 tsp. Italian Seasoning
1 tsp. parsley, dried
In a bowl combine your three cheeses. In a separate bowl combine the first 5 ingredients. Add 1/2 the cheese mixture and the tortellini, stir to combine. Pour into a 12″ Dutch over that has been sprayed with non-stick spray.
Combine the remaining cheese with the seasoning and parsley and sprinkle evenly over the top. Bake at 350 (using 16 coals on top and 8 underneath) for 20 – 25 minutes until it is brown and bubbly. Let sit 10 minutes before serving, it will thicken as it sits.
