I love breakfast, and I find myself making casseroles all the time. This one has quickly become one of our family favorites! With just a few ingredients it is so easy to throw together. Whether you are in the backyard or up in the mountains, you are going to love it too.
- 4 slices bacon, cooked and chopped
- 1 lb. hot sausage
- 2½ C cheddar cheese, grated
- 2 C milk
- 3 eggs
- ½ tsp. pepper
- salt as needed
- ½ tsp. onion powder
- 2 lbs. Tater Tots, frozen
- In a 12" Dutch oven, brown sausage until cooked and crumbled. Meanwhile combine milk, eggs and spices and whisk together. When sausage is cooked through, cover with 2 cups of cheese. Pour egg mixture over the top, cover evenly with tots and bake at 350 for 35 minutes. Remove lid and sprinkle with remaining cheese and bacon. Heat another 5 minutes to melt cheese. Garnish with parsley.
This recipe looks great. One question: how do you keep the tater tots frozen when camping? My Yeti won’t even do that!
