Lately I have made a couple of posts about my new and ultra amazing Orion Cooker. I have done ribs, chickens and a brisket. This weekend I went BIG and cooked an 8 lb. pork shoulder. The results – WOW! My family went absolutely nuts over this flavorful and tender mountain of meat! I don’t know how this cooker works, but the results are magic. Cooking outside has never been so fun, so fast and so easy. Why don’t you make it a pork weekend, you will be glad you did!
Pork Shoulder
1 8 lb. pork shoulder
Rub:
1/4 c paprika
1/8 c black pepper
2 T garlic powder
2 T onion powder
1 T Cheyenne pepper
1/4 c salt
1/4 c brown sugar
Mix run together and cover your pork shoulder all over, rub it in good. Place seasoned shoulder into a 2-gallon zip lock bag and refrigerate 24 hours. When you are ready to start cooking, place the drip pan in the bottom of your Orion Cooker and a few small hickory chips around the edge of the drip pan. Place a rack in the middle position. Placed the seasoned shoulder on the rack and replace the lid.
Add one bag (11 lbs.) match light charcoal around the charcoal pan at the bottom and 12 – 14 briquettes in the top cup. Light charcoal, walk away and come back in 4 1/4 hours.
