Dutch Oven Carrot Cake

Dutch oven desserts can be so easy and also have amazing flavor! This is one of those dishes. With only a few, simple ingredients everyone will be coming back for more. Just think of a carrot cake with the cream cheese frosting on the inside.  A real change to the traditional dump cake. I think you will love it!

Dutch Oven Carrot Cake

1 – 1 1/2 c coconut
1 carrot cake box mix
1 stick butter
8 oz. cream cheese
1 lb. powered sugar (4 cups)

Prepare the cake mix according to the directions on the box. Spray your Dutch oven with Pam. Cover the bottom of your oven with coconut. Pour the prepared cake mix over the top. Combine butter, cream cheese and powered sugar together until smooth. Drop frosting by spoonfuls around the cake, but do not mix into the cake. (This will sink down and bake into the cake.) Bake at 350 for 35 – 40 minutes until the cake is done and starts to pull away from the sides.

    How much a “cube” of butter?
    Do you mean one stick? Or 4 sticks ( usually sold in a box of 4 sticks – is that what is meant by a cube ? Seems like a lot. Want to try this but gotta get it right.
