Whether you are in the back yard or out in the mountains somewhere, it is always good to have an easy to make, hearty meal. And this chili is a family favorite!. It is so simple and the ingredients are easy to just “grab and go” to your destination. So make up a batch, sit around the camp fire and make some memories!
Dutch Oven Chili
1 lb. ground beef
2 cans pork and beans
1 can kidney beans
2 cans canned tomatoes, petite diced
1 pkg. chili seasoning mix (below)
1 beef bullion cube
Seasoning Mix
2 T. flour
2 T. instant minced onion
1 ½ tsp. chili powder
1 tsp. seasoned salt
½ tsp. crushed, dried, red pepper
½ tsp. instant minced garlic
½ tsp. sugar
½ tsp. ground cumin
Combine seasoning ingredients in small bowl and set aside. If you are travelling, just put it into a zip-lock bag and you are ready to go.
The chili can be made in a Dutch oven with charcoal or on your camp stove. Brown ground beef; drain. Add beans, tomatoes, seasoning and bullion. Reduce heat and simmer 10 minutes, stirring occasionally. It is great to have Corn Chips and grated cheese for toppings.
