I love soup because it’s easy to make wherever you are. I first tried this soup at a local church pot luck and immediately fell in love with it. Of course, it’s not difficult to love something with sausage in it. Give it a try and let your family fall in love with it too!
1 lb mild Italian sausage
3 carrots
1 stalk celery
1 Tbsp. extra virgin olive oil
8 cups chicken broth
1 Tbsp. dried Italian seasoning
1 can white beans
1 can petite diced tomatoes
1 can tomato sauce
1 can tomato paste
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. pepper
1/2 lb small shell noodles
2 cups fresh basil chopped
Using a preheated dutch oven or soup pot on a camp stove:
Cook sausage, drain, and set aside.
Sauté carrots and celery.
Add everything except pasta, sausage, basil.
Bring to a boil.
Add pasta and basil.
Cook until pasta is done.
