Ham and Green Noodle Casserole

This is truly a family favorite! I have been making this flavorful dish for almost 30-years and my children LOVE it. It is simple but packed full of flavor, creamy and very filling. I hope it will become a family favorite of yours as well.

Ham and Green Noodle Casserole 

1 c sour cream
1 can cheddar cheese soup
2 c green noodles (spinach noodles), uncooked
1 ½ c cooked ham, diced
½ c black olives, sliced
1 can sliced mushrooms, drained
¾ tsp. prepared mustard
¼ c milk
1/8 tsp. pepper
1 c sharp cheddar cheese, grated

Boil noodles as directed on the package. If you don’t have spinach noodles you can use any noodles you might have on hand.  Meanwhile, in a separate bowl combine sour cream and soup, mix well. Add the ham, olives, mushrooms (you can use fresh if you like), mustard, milk and pepper. Mix to combine. Add cooked noodles and give it a good stir.

You can pour into a 12″ Dutch oven and top with cheese and bake at 350 for 25 minutes until heated through. You can also dump it into a 12″ cast iron fry pan, sprinkle with cheese and place a dutch oven lid on top. Heat on a camp stove until heated through and the cheese is melted.
