As a scout master I was always looking for an easy soup to prepare on a camp out. As my daughter was reading through my mother’s old journals she found this soup recipe that we just had to try. It only has six ingredients but it is full of flavor! The pork ‘n beans were a bit of a mystery item but it adds a wonderful smoothness to the soup. Bring mom into your backyard and give her soup a try!
2 lbs. hamburger
1 qt. tomatoes, mashed
6 c. water
2 envelopes vegetable soup mix
1 can pork ‘n beans
1 hand-full pasta, your choice
In a 12″ Dutch oven brown the hamburger until cooked through. This can be done over charcoal or on a camp stove. Add the rest of the ingredients except pasta and mix well. You can use Knorr or Lipton soup mix. Simmer for about 30 minutes to blend flavors. Add the pasta and continue to simmer until the pasta is tender.
