A sweet treat is a must have on Mother’s Day. Though it has fallen out of fashion in recent years, except for during certain times of the year, my wife enjoys spice cake. This caramel pudding cake brings the spice with nutmeg and cinnamon, while adding a sweet caramel layer on the bottom. Yes, this cake actually performs a magic trick when you bake it. Interested? 3 cups water
2 cups brown sugar
4 T. butter
1/2 cup butter
1 1/2 cup white sugar
1 1/2 cup apple, pealed and grated
3 cup flour
1 1/2 tsp. nutmeg
1 1.2 tsp. cinnamon
3 3/4 tsp. baking powder
3/4 tsp. salt
2 3/4 tsp. baking soda
1 1/2 cup milk
1 1/2 tsp. vanilla
1 1/2 cup raisins
3/4 cup chopped nuts
Mix first three ingredients, water, brown sugar, and 4 T. butter, in a sauce pan and bring to a boil. Remove from heat and set aside. In a mixer, cream white sugar with remaining butter until smooth, then add apples. In a separate bowl, combine dry ingredients. Slowly add dry and wet ingredients to the mixer, alternating between the two to avoid lumps.
Spread in the bottom of a 12-inch dutch oven (or a 9×13 if you’re cooking inside). Pour the brown sugar sauce over the top. Bake at 375 for 45 minutes.
