Bakes beans are sort of like the chocolate chip cookie of the side dish world. Everybody has a recipe and it’s the best recipe. Well, here’s one variation to try. It’s easy, as baked beans should be, and delicious.
8 strips of bacon
1/2 medium onion
sweet bell peppers
53 ounce can of baked beans
1 cup brown sugar
1 cup barbecue sauce
dry mustard to taste
Cut the bacon into 1/2 inch strips, cook, and set aside. Dice onion and sweet bell peppers, set aside. For this recipe I used red, yellow, and orange sweet mini peppers. Open your beans and drain off the thin water from the top. In a large mixing bowl, combine beans, brown sugar, barbecue sauce, and mustard, then the rest of the ingredients. Pour the mixture into a glass or ceramic bowl. You can also use a dutch oven if it will fit in your smoker. Place your container into a 220-250 degree smoker for 2 1/2 to 3 hours. I used Applewood this time, but choose whatever flavor you want. Have fun with it. Serve and enjoy!
