BBQ Rib Sandwich

These tasty little sandwiches are knock-your-socks-off good! The crispy garlic bread and spicy pork is all mellowed by the wonderful cheese topping. This is so incredibly delicious and pretty simple to make. It is good on a game day or ANY day. You have got to give these a try at your next back yard get together!

BBQ Rib Sandwich

2 1/2 – 3 lbs. country style spare ribs.
1 c vinegar
1 c water
1 c brown sugar
2 c ketchup
1 T chili powder
1 T Ancho chili pepper
1 T black pepper
1 French baguette
1/4 c butter, softened
4 cloves garlic, minced
3 c sharp cheddar cheese
1/2 mayonnaise
1/2 c green onions, sliced

Heat your smoker to 275 degrees. (Do not use wood chips or a water tray.  We are using it as an outdoor oven.)  Place the ribs into a 9 X 13 disposable aluminum pan (for easy clean up) or make sure to line your pan. Combine vinegar, water, sugar, ketchup and spices.  Pour sauce over ribs and place uncovered into your smoker. Cook for 3 hours or until tender. Pull pork apart and mix with additional sauce if desired.

Slice baguette in half lengthwise. Combine butter and garlic and spread evenly over the bread. layer pork over bread.  In a bowl combine cheese, mayonnaise and green onions and spoon over pork. Place on a cookie sheet and put on a 350 degree grill for 10 minutes or so to crisp the bread and melt the cheese. The grill adds just a little smokey flavor!  Slice into desired pieces and serve.

NOTE: The ribs can also be cooked in a Dutch oven. Decrease the water and vinegar to 1/2 cup each. Cook and replenish coals as needed until tender.
