I love chicken wings! I wish that chickens had six or eight wings just so that I could have more of them to eat. I love them fried, baked and now I love them smoked. They are tender, smokey, spicy and wonderful. Add some blue cheese dressing and wings cannot be beat!
Smoked Chicken Wings
3 – 5 lbs. chicken wings
2 – 3 T olive oil
2 – 3 tsp. Tony Chachere’s Cajun Seasoning
Rinse wings and pat dry. In a large bowl, add wings, oil and seasoning. You can add more or less seasoning depending on your taste. If you don’t have Tony’s then just use your favorite seasoning or spice rub. Place in your smoker along with your favorite wood chips and smoke at 275 until you reach an internal temperature of 165, about 1 1/2 hours or so. Serve with celery sticks and blue cheese dressing.
