My family eats rice every week and we love it. I look forward to having leftover rice in the fridge because that means ham fired rice! My wife is the very best at turning plain white rice into a pallet-pleasing masterpiece. With bacon, veggies and eggs, it has a little bit of everything. It goes with so many dishes and kids love it. Next time you have leftover rice, whip up a batch – you will be glad you did.
Ham Fried Rice
2 cups uncooked rice, cooked and chilled
¼ lb. bacon, diced, reserve oil
2 eggs, slightly beaten
3 green onions, chopped
8 oz. frozen veggies (peas, carrots etc)
3/4 c diced ham
Dark Chinese soy sauce, La Choy, to taste
This can be done on a Volcano Grill or on your camp stove. Use a cast iron wok or a large, heavy cast iron fry pan. Cook diced bacon until crisp, remove an save, leaving grease. Cook egg and scramble in bacon drippings. Remove from wok. Put in onions, vegetables and ham.
Stir-fry a few minutes. Add chilled rice and stir-fry until hot. Add bacon, eggs and soy sauce. The amount of soy sauce is up to you, make your rice lighter or darker. Taste it as you go along until it is seasoned just right.
