Stuffed Meatloaf

This is a great way to jazz-up your meatloaf. With green olives, mushrooms and cheese it really has a great flavor. Make it a part of your next outdoor adventure.

Stuffed Meatloaf 

2 lbs. Ground Beef
2 Eggs
1 Pkg Onion Soup Mix
10 Ritz Crackers, crushed
1/4 Cup V8 Juice
1/2 Cup Mushrooms, sliced
1/2 Cup Green Olives, sliced
1 Cup Swiss Cheese, cubed
1 1/2 Cups Cheddar Cheese, cubed
1/4 Cup Catsup
2 T Brown Sugar
1/3 tsp. dry mustard

Combine ground beef, eggs, soup mix and crackers and V8 and mix well. Pat mixture onto wax paper into a rectangle. Top with mushrooms, olives and cheese, leaving room on the sides and an inch on the end. Using the wax paper for support, roll-up the meatloaf, sealing the sides and end so the cheese won’t leak out.

Place in a 12″ Dutch oven and bake with 8 coals under and 16 on top to 1 hour 15 minutes or until done. Combine catsup, brown sugar and mustard and pour over the top. Bake another 10 – 15 minutes.

  1. This meatloaf is amazing! It was very moist and packed with flavor. My favorite part was the glazey sauce on top, oh and the gooey cheese inside. I’m not usually a fan of green olives, but I didn’t really notice them too much. They just added to the overall flavor. Best meatloaf I’ve ever eaten.
