Cooking in a solar oven is so easy and fun. My daughter came over and we whipped up some banana scones for lunch. They baked up beautifully. Such a wonderful snack to share together, warm, moist, yummy banana scones with a cardamom kick. These were almost the texture of a short bread, I think you will like them. Source: Fugi Mama
Add two tablespoons milk, folding the ingredients together as you go. Keep adding milk one tablespoon at a time until you have a soft dough, but do not over mix. You should still see lumps of butter in the dough.
- 1½ cups all-purpose flour, plus extra for dusting
- ⅓ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon fine sea salt
- ⅛ teaspoon ground cardamom
- ½ cup (1 stick) cold butter, cut into ½-inch cubes
- 2 bananas, peeled and chopped into small pieces
- ¼ cup whole milk
- 1 large egg, beaten with a pinch of fine sea salt, for egg wash
- 2 tablespoons granulated sugar for sprinkling
- Whisk together the flour, sugar, baking powder, salt, and cardamom in a large mixing bowl until completely incorporated. Add the butter, and toss to coat each piece in flour. Using a pastry cutter, cut in the butter until well mixed. Add the banana pieces and toss to distribute evenly.

- Place dough to the prepared pizza pan. Dust the top of the dough lightly with flour, then use your hands to gently pat it into a round disk, and score it into 8 wedges. Brush the tops of the scones liberally with the egg wash, then sprinkle with the granulated sugar.
- Place in a preheated solar oven and bake for 40 - 45 minutes until done.
