If you have a garden, summer means zucchini. There is a lot you can do with these green wonders. Besides making bread you can stuff ’em, fry ’em and shred them into noodles. But my brother Dan grills these zucchini spears into a great side dish. You have to try this!
Dan’s Grilled Zucchini
Zucchini
1 cube butter
1/2 t garlic powder
1 t season salt, like Lawry’s
1 T grated Parmesan Cheese
Heat grill to 350 degrees. Cut zucchini into spears, either 1/4 or 1/6 depending on the size. with a sharp knife, cross-cut through the flesh. Melt butter and add garlic, season salt and cheese.
Place zucchini flesh side down between the grates on the grill. Cook 5 minutes.
Use tongs to turn the spears and brush with butter mixture. Continue to grill for another 5 – 10 minutes. Try not to overcook or zucchini can get mushy. Sprinkle with a little salt and enjoy!
