Coop’s Brisket

There are few things I enjoy more than a good beef sandwich, and brisket is about as good as it gets.  Several years ago while living in Wichita, Kansas I was introduced to a brisket that had real potential.  I went home and tweaked the recipe a few times until I found the right combinations of flavors.  This tender brisket has spice, a little heat, incredible flavor and  is sure to please.  You family will want you to start cooking every weekend!  You will be amazed at what just came out of your Dutch Oven!  This is one I am proud to call my own.

Coop’s Brisket

1 beef brisket

2 – 3 sliced onions

Sauce

1 T. salt

1 tsp.  paprika

½ tsp. red pepper

1 tsp.  chili powder

½ tsp. pepper

¾ cup ketchup

2 T. vinegar

¾ cup water

2 T. Worcestershire sauce

¼ cup brown sugar

Place brisket in Dutch oven and bake at 275° (12 on top 6 on bottom) for 2 hours, replacing charcoal as needed.  While the brisket is cooking, in a sauce pan combine all the ingredients for the sauce and simmer for 15-minutes.  The sauce can easily be doubled if you prefer to have more sauce.  Remove the brisket and trim off any excess fat.   Pour out and discard all liquid and return the brisket to Dutch Oven.  Top brisket with sliced onions pour the sauce over the top.  Continue to bake an additional 3 hrs. at 275°.

Slice and serve with onions and sauce spooned on top.  If you are camping and need a great serving platter, simply invert your Dutch Oven lid and set it on a lid holder.  It is a beautiful way to display your main dish.
