Chili Relleno Casserole

During one of our neighborhood get-togethers, Dave Cisneros came up with a great side-dish.  It Is hard to go wrong with lots of cheese, green chilies and eggs.  It is wonderful with chicken, rice dishes and great with a bowl of chips.  I hope you enjoy it as much as we do.

Dave’s Chili Relleno Casserole

1/2 lb. cheddar cheese, grated

1/2 lb. Monterey Jack Cheese, grated

2 Cans chopped green chilies

3 Eggs

3 T Flour

1 1/4 C Milk

Place cheddar cheese in the bottom of a 10″ Dutch oven.  Add chilies evenly on top of the cheese and layer the Monterey Jack on top of the chilies.  Combine eggs, flour and milk and whisk until smooth.  Pour egg mixture over the top and bake at 350 for 30 – 40 minutes.  A knife should come out wet but not goopy.  For a larger crowd you can one and a half the recipe and put it in a 12″ oven.
