Blackberry Bread Pudding

I should have been raised in the South because I have always enjoyed bread pudding. Normally I make it with raisins but we decided to use blackberries fro our back yard. This is one of those guilty pleasures that your family will LOVE! You can also use raspberries or raisins if you prefer.
Ingredients
  • 1½ loaves white bread, cubed
  • 2 cups heavy cream
  • 2 cups milk
  • 1 C. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 4 C. blackberries
  • 1 C. sugar
  • ½ C. apple juice
  • Vanilla Sauce
  • 1 cube butter
  • 2½ T. flour
  • 1½ C. heavy cream
  • ¼ tsp. salt
  • ⅓ C. sugar
  • 1 tsp. vanilla
Instructions
  1. In a large bowl, combine cream, milk, sugar, egg and vanilla and beat until well combined. Add bread to cream mixture, Stir to coat well. Let bread sit in cream mixture for 30 minutes, stirring every 5 minutes to allow cream to absorb.
  2. In a sauce pan combine blackberries, sugar and apple juice and cook for 5 minutes, Put ¾ of your bread mixture into a 12" Dutch oven and top with your berry mixture. put the remaining bread on top and bake at 350 degrees for 40 - 45 minutes until done. Serve with vanilla sauce.
  3. For the vanilla sauce, melt butter in medium saucepan and add flour. Stir 10 minutes until it has a nutty aroma, be careful not to burn. Add salt, cream and sugar and stir until mixture becomes thick. Remove from heat and stir in vanilla.
