General Tso's Chicken

When I first read this recipe I thought "How can you pour 3 cups of liquid onto your griddle and not have it just run all over the place". I was so intrigued I just had to give it a try! Wow, what a wonderful, flavorful dish was created. If you like to cook on a flat-top, you will defiantly want to try this one.
Ingredients
  • 3 lbs. Boneless skinless chicken breasts or thighs, cut into 1" pieces
  • ½ C Cornstarch
  • 1 C Green onions
  • Sauce:
  • 1½ tsp. minced garlic
  • 1 tsp grated ginger
  • ¾ C sugar
  • ½ C Soy sauce
  • ¼ C White vinegar
  • ¼ C White cooking wine or Mirin
  • 2 C Chicken broth
  • 2 tsp. Red pepper flakes
Instructions
  1. In a large measuring cup, mix all the sauce ingredients together and set aside.
  2. Dice up the chicken and place in a large bowl. Add cornstarch and mix together until all the chicken is well covered.
  3. Heat your griddle to medium high, add a little oil and then add your chicken. Cook chicken until it is golden brown and almost done. (The cornstarch will stick to the chicken and then release back off as the sauce is added,) Pour your sauce over the chicken about a third at a time, using your spatula to fold it back over the top of your chicken. As it thickens, continue to add more sauce. Add half your green onions. When it has thickened, remove and serve with hot rice. Top with remaining green onions. This is so good!
  4. This recipe can be easily cut in half.
