I am always trying to find new ways to use my smoker. Normally I don't think of desserts coming out of a smoker but this one was wonderful! The sweet berries with a wonderful moist cake were a total delight. The surprise was the marshmallows, which added a great texture to the cake. It really is a lot of fun to take your cooking outside!
Ingredients
3 cups triple berry mix, frozen
¼ c sugar
1 pkg raspberry Jello, 3 oz.
1 yellow cake mix
2 eggs
1¼ c water
2 T oil
1½ c miniature marshmallows
Instructions
Spray a 12" cast iron fry pan or line it with parchment. Add the berries and top with sugar and Jello powder. In a separate bowl, combine cake mix, eggs, water and oil. Mix well and then add the marshmallows. Pour the cake mix over the berry mixture.
Place on the middle rack of a preheated smoker at 350 and bake for 35 - 40 minutes until done. Allow the cake to cook for a few minutes and then invert onto a clean plate.
