Salisbury Surprise

I love my Aunt Opal. She lived on a ranch in Nevada and I was so excited any time we could go visit her. This is one of her family recipes given to me many years ago. It takes a regular meat loaf to the next level. After eating it, you will probably love Aunt Opal too!
Ingredients
  • 1½ lbs. ground beef
  • ½ lb. pork sausage (I used hot)
  • 2 eggs
  • ¼ c cracker crumbs
  • ¼ c ketchup
  • ¾ c cheddar cheese, grated
  • Stuffing
  • 6 slices bread, toasted
  • ½ c butter, melted
  • 1 small onion, diced
  • ½ c celery, chopped
  • ½ tsp. salt
  • pepper to taste
  • ¼ tsp. garlic salt
Instructions
  1. Mix meatloaf together. Divide in half and pat into two ovals.
  2. Make stuffing by melting the butter (in a fry pan on your camp stove or in your Dutch oven) and adding the onion, celery and spices. Saute until veggies are tender. Add bread and mix well. Place stuffing on top on one oval and spread it out a little. Place the second oval on top and seal all the edges well. Place in a 12" Dutch oven and bake at 350 for 60 - 90 minutes until cooked through. Serve with mashed potatoes and gravy if desired.
