One pot meals are the best. If you need to make a dinner for scouts, youth or just a bunch of hungry children – this is a great one to try! It is warm, flavorful and super delicious. It’s a guaranteed winner.
Chili Mac and Cheese
1 T oil
2 cloves garlic, chopped
1 onion, diced
1/2 lb. ground beef
4 c chicken broth
1 can diced tomatoes, 14.5 oz.
3/4 c white beans, rinsed
3/4 c kidney beans, rinsed
2 tsp chili powder
1 1/2 tsp. cumin
10 oz. elbow mac, uncooked
6 oz. Velveeta cheese, cubed
3/4 c cheddar cheese, grated
In a 12″ cast iron fry pan or large heave sauce pan heat oil, onion, garlic and ground beef. cook over medium heat until browned. Add broth, tomatoes, beans and spices. Bring to a boil and salt and pepper to taste. Add pasta, cover and simmer on medium-low heat until tender, about 15 minutes. (Add more chicken broth if needed.)
Add cubed Velveeta and stir to melt. Remove from heat, top with cheese and serve.
